This is a variation on an almond dressing I had at https://www.yogaville.org/.
They served all vegetarian and mostly vegan meals. The food was so good, but honestly, ANYTHING is good with this dressing. Use as a traditional salad dressing, drizzle over cooked vegetables, toss with slaw in place of mayonnaise-based dressing.
I started making it as soon as I got home and have modified by switching pumpkin seeds for almonds and cutting down on the olive oil. The pumpkin seeds and nutritional yeast provide a powerful nutritional PUNCH that adds essential protein and B-Vitamins to a vegetarian dish.
Pumpkin Seed Dressing
- 1 cup Pumpkin Seeds
- 1 cup Nutritional Yeast
- 1/2 c olive oil
- 1/2 c soy sauce / non-soy alternative like coconut aminos
- 1 c water
Directions: blend away!! It makes a quart. Store in refrigerator. Keeps 7-10 days. Will begin to separate so shake it up and it’s still good.
