In all honesty, I can’t recall if this photo of was my son’s favorite Cookie Dough treat, or a Cookie Dough Dip I made for Christmas!?!?!?
In either case, my confusion is your gain! I’ll post both recipes recipes under this one multipurpose photo!
Cookie Dough
No, this isn’t a cookie dough you bake in the oven, it’s meant to be eaten raw. It’s a super simple recipe and when my son (12) is in the mood, he’ll make it himself. It is really rich though so I have to encourage he make it into dough-balls and eat a few, not the whole bowl of dough!
- 1 c almond flour
- 1/4 c coconut flour
- 1/4 c maple syrup
- 3 T melted coconut oil
- 1 t vanilla
- pinch of salt
- 1/4 c mini chocolate chips.
- Just mix it all together! Form into 2 T balls and store in the refrigerator.
- VARIATIONS: Peanut Butter cookie dough – replace coconut oil with peanut butter. Snicker doodle – Omit chocolate chips and add 1 t cinnamon.
Cookie Dough *DIP*
This can be served with sliced apples or graham crackers.
- 2 c chickpeas (if using canned, rinse and drain)
- 1 t vanilla
- 1/4 c oats
- 1/4 c almond butter (or peanut butter, or other nut butter)
- 1/4 c almond milk
- 2 T maple syrup
- pinch of salt
- 1/4 c mini chocolate chips.
- Topping: 2 T mini chocolate chips, 2 T crushed nuts
- Puree all ingredients in a food processor. Pour into a bowl and add toppings. Seal well and refrigerate until serving.
