Chocolate Banana Cake

This is a recipe I stumbled on a few years ago…and Jen-ified it. I cut the sugar, added more banana and applesauce. If using as a dessert feel free to add some mini chocolate chips. I usually serve it as breakfast to my choco-holic daughter so I skip the chips. It’s sweet enough and super chocolate-y with out them.

Chocolate Banana Bread / Cake

  • 3 ripe bananas
  • ½ cup sugar
  • ½ cup apple sauce (unsweetened)
  • 1 t vanilla
  • 1 egg
  • 1 cup flour (can be whole wheat or white)
  • ½ cup unsweetened cocoa powder
  • 1 t baking soda
  • ½ t salt
  • Optional ¼ cup mini chocolate chips on top

Combine all ingredients. Grease or parchment line an 8×8 baking pan. Bake at 350 for 25-30 minutes.

This cake is very moist. Refrigerate once cooled.
