This recipe was actually attached to the bag of organic sweet potatoes I bought from Costco. We don’t do a lot of sweet potatoes, but I thought I’d get some to test out on our spiralizer for sweet potato chips. I wasn’t thinking – as with most things from Costco, their sweet potatoes were the size of submarines! Way too big for the spiralizer – so save yourself the time and don’t try it. But – this recipe was a definite winner and used up the scraps from my botched sweet potato chip attempt.
Sweet Potato Bars (I have made a few modifications to the original recipe)
- 2 sweet potatoes (enough for 1 1/2 cups cooked and mashed)
- 1 cup chick peas
- 3 T maple syrup
- 1 T honey
- 2 T coconut oil, melted
- 2 t vanilla
- 1 t cinnamon
- 1/8 t salt
- 1 cup oats
Icing: 1 T cream cheese + 2 T maple syrup
Puree potatoes, chickpeas, syrup and honey, coconut oil, vanilla, cinnamon and salt. Stir in oats. Grease 8×8 square glass pan and bake at 350 25-30 minutes until firm and slightly golden at edges. COOL completely. For icing, stir together cream cheese and maple syrup and drizzle over cooled bars. Stir in refrigerator.
