Superbowl party fare!

I promise an upcoming post will not be all recipes and photos of food!  😉

But for now…

A new crispy chocolate/almond/coconut protein bar

  • 1/2 c oats
  • 1/2 c organic puffed rice cereal
  • 1/2 c protein powder ( I use a hemp based one)
  • 2 T cocoa powder
  • 1/2 c shredded coconut – unsweetened
  • pinch sea salt
  • 1/4 c coconut oil
  • 1/3 c nut (almond/peanut/sunflower,etc butter)
  • 1 T honey
  • 1 T milk of choice
  • Melt coconut butter, nut butter, honey and cocoa powder in a sauce pan.  Remove from heat and stir in remaining ingredients.  Pour into parchment lined 8×8 pan – press down.  Chill 1 hour or more, cut into squares or bars.

The Devils Eye eggs I posted on fb.  I just mixed my guacamole with 3 egg yolks and piped into the eggs and topped with a black olive slice.

Now I am crazy amazed how these turned out – Gluten/corn free tortilla chips!!! To be honest, they don’t really tasted like Doritos, but still awesome!  I subbed flax meal for flax seeds.

Chewy Chocolate Coconut Cookies

  • 1/2 c honey
  • 1/4 c melted butter ( or coconut oil)
  • 1 T vanilla
  • 2 T cocoa powder
  • 2 c almond flour
  • 1/4 t baking soda
  • pinch sea salt
  • 1/2 c shredded coconut.

In a sauce pan melt honey, butter, vanilla and cocoa.  Remove from heat and stir in remaining ingredients.  Form into balls and flatten slightly.  Bake on a parchment lined pan at 325 for 10 min – do not over bake or they’ll be dry and not chewy.  Let cool on pan or on parchment.  Don’t move until cool.  Store in air tight container.
