The other night I was tired and not in the mood to make dinner…but the darndest thing about kids, you have to feed them! It was 6:00 and I had to get my act together. What did I have and what could I make that resembled a meal and not a bowl of oatmeal – not that breakfast for dinner isn’t a great option, too!
Black beans, sweet potatoes (roasted cauliflower on the side)
Black bean burgers :
- 2 cans of rinsed and drained black beans (or about 3 1/2 cups)
- 1T garlic – diced
- 1/4 c onion, grated with juice
- 2T cilantro, chopped fine
- 2T parsley, chopped fine
- 1 egg, beaten
- 1/2 c breadcrumbs (reg or gluten free)
- salt / pepper to taste
Smash the beans, stir in remaining ingredients. Form in to burgers what ever size you desire, about 3/4″ thick. I cooked in a cast iron pan with olive oil, just a few min on each side to crisp and brown. Serve as you would a ham/cheeseburger. I just can’t get over how much it LOOKS like a beef burger?
